Answers: No, it's not simple. You can have the butcher attempt to fillet it for you. It's actually better tasting to leave the bone in and fillet during serving. ASk the fish monger to debone it, its quite a tricky thing to do Slide a filleting knife down the backbone and remove the filet, then using the knife or pliers remove the backbone from the other side. You cant actually do it and then stuff it because you have two bits of fish to work with. never herd of one stuffed.'' The very best way is to have the fish monger do it. Next best is to fillet the fish with a very sharp boning knife. Insert the knife behind the gills and slice toward the tail along the backbone. Remove the top fillet then remove the bone, head and tail. Secure the file ts together along the back with a skewer or tooth picks. Insert stuffing generously.Cook as desired. Baked or broiled might be best. I would suggest that you buy your fish already cut the way you want them,but if it is whole because you catch them fresh and you do this often you really should learn to prepare them yourself.I ve never attempted to debone a fish whole but it isn't hard to fillet one, and I stuff the fillets all the time.
I don't bother to fillet a small fish.they are best cooked whole.with a larger fish,I wash it in running water as i descale it by holding the tail in one hand and scraping it with the back of a knife. dry it off and lay it on a non slip surface .holding the tail i make a cut and very carefully slide the knife along the bones, coming to the head ,i cut across and release the fillet.now turn over the fillet(skin side down) and work your knife between the skin and the flesh ,(small end of the fish)keeping your knife as flat as possible slide it the whole length of the fish to remove the skin.repeat this process for the other side.
