Question: When youre fermenting things, such as herbal remedies --- do you HAVE to use a glass jar.?
I was wondering this because, i am trying to make this 'super tonic' stuff that helps build your immune system and it specifically states to use a glass jar... however, i cant find a glass jar that seals airtight...

I am not sure if it needs to be in glass, or if it needs to be in airtight...

does the airtight have anything to do with the way something ferments.?

what i was thinking of, is the natural pressure that builds up, is that necessary to keep that pressure as part of the fermentation process.?

i put my stuff in a plastic jar for now, that is airtight, hopefully... we will see how it turns outHealth Question & Answer

I remember my grandpa used to ferment stuff (I have no clue what it was) in a big, glass pickle jar, like one of those ones you might see in a bar. I also have an older bartending guide that has many recipes for various sorts of home made "wine" and it usually calls for the ingredients to be put into a glass or ceramic container which can be sealed. I would guess it is not necessarily the best idea to use plastic, because as stuff ferments it gives off gasses, which can do strange things to plastic, like causing it to warp a bit under the pressure, thus becoming less airtight. If you have a large glass container but maybe the lid doesnt fit just right, you might try to make it airtight by using the same sort of sealing/paraffin wax used in canning. It is usually easy to find anywhere you would buy mason jars. I have seen wide mouth mason jars one quart (32oz) in size, if you need something larger you might try looking at a cooking/kitchen shop that sells culinary items.Health Question & Answer

It needs to be glass or glazed ceramic.

Plastic containers cannot be thoroughly cleaned and sterilized because they are too porous. The residue of whatever was previously in that contained could contaminate your product. Plastic also releases harmful chemicals and will alter or diminish the potency of what you are fermenting in it.

I only use glass jars to prepare all my tinctures and oil infusions.

If you're having trouble finding one, go to your local hardware store and pick up a Mason jar. Some grocery stores also carry them this time of year.
