You may have celiac disease, wait until you've been diagnosed to start a gluten free diet. That's because it may be more difficult for your doctor to make a diagnosis if you've begun the diet before being tested.

Initially, following a gluten free diet may be frustrating. But with time, patience and creativity, you'll find there are many foods that you can eat and enjoy.

To manage celiac disease and prevent complications, it's crucial that you avoid all foods that contain gluten.

Oats may not be harmful for most people with celiac disease, but oat products are frequently contaminated with wheat, so it's best to avoid oats as well. The question of whether people eating a gluten free diet can consume pure oat products remains a subject of scientific debate. Difficulties in identifying the precise components of grains responsible for the immune response and the chemical differences between wheat and oats have contributed to the controversy.

Avoid these products unless labeled 'gluten free'
The following grains are gluten free as grown, but may be contaminated by other grains during harvesting and processing. Verify that these are processed in a gluten free facility before consuming them:

Make sure you require a gluten free diet by getting tests done by your doctor or alternatively I would recommend www.yorktest.com. Being gluten free is a rather restrictive diet, so you don't want to be on it if you don't need to.

Some gluten-containing cereals which should be avoided are:
Wheat (including spelt, couscous, semolina, bulgar wheat, Kamut)
Rye
Barley
Hybridised strains (cross-breeds) of these cereals.

The most obvious sources of gluten in the diet are breads, pastas, cereals, flours, pizza bases, cakes and biscuits. Gluten-containing cereals can also be used as an ingredient in soups, sauces, ready meals and processed foods such as sausages.

Always read labels of products and always ask when ordering in restaurants etc. I was surprised to find out that wheat flour is often a coating on ready made chips to make the outside crispy!

Supermarkets and specialist stores now provide gluten free alternatives, so check them out. I particularly like gluten free bakewell slices.

also, foods that are naturally gluten-free: Rice, potatoes, polenta, quinoa, millet, corn (maize), plain meat, fish, eggs, cheese, milk, most yoghurts, fruit, vegetables, pulses (peas, beans and lentils). :o)Health Question & Answer

Edit
If you are worry/ have symptoms of Coeliac Disease. From what I learned, is just that your body lack the enzymes that break down glutens, basically you body lack amylase, pepsin, protease, papin and/or chymopapain. If you can't break down the food that goes into your system, it turns rancid in you system and unbalance your system. Dr. DicQie Fuller talks about that in one of her books called "The Healing Power of Enzymes". If you want more informations, you can e-mail me at henryc612@yahoo.com and I can ask Dr. Fuller for you.Health Question & Answer
