Since I am not allergic to poison ivy can I eat poison ivy salads?!

Are you going to do this to ensure your immunity to it.? I wouldn't suggest it as continued contact with this plant can cause sensitivity. If you turned out to react negatively to your salad, your throat could swell shut.
