The most common would have to be using skin calipers. You use them to pinch the skin at a number of spots on the body and then use that data to calculate fat mass. The "Gold Standard" of determining fat versus muscle mass is called hydrostatic weighing. It involves dunking yourself in a tank of water and measuring the amount of water you displace.
