Question: What's better for you, a slightly under-ripe banana or an over ripe one.?

I think you derive the same benefit from both. I prefer them just at the point of ripeness when they still have a slightly tart flavor. When they start to get overly ripe and pithy, I cook with them.Health Question & Answer

If you're diabetic then an under-ripe one would be better for you, simply because as bananas ripen, the natural sugars within them start to break down and it become sweeter. Other than this, how ripe the banana is shouldn't change the vitamin and mineral composition and would be just as good for you either way.Health Question & Answer

It depends on how "old" it is. If it is old and so decrepit you can't eat it of course it has lost it's nutritional benefit. But I doubt it has lost much benefit because it is a bit "over-ripe. I actually prefer my bananas a bit over-ripe. Not too over-ripe, but not green either. If you have a problem with them going bad get some of the new "green" bags that they sell in the vegetable section that can make bananas last up to 30 days. They do work. I use them and they make a huge difference in the storage of all vegetables and fruits.
