Answers:
Yeah thtas about right. Although I thought one tablespoon equaled 120... I must have read wrong...
Anyway, if you cooked your veggies in water (for example steaming) you dont add anything to it hence theres no extra calories to count. Whereas when stir frying, you use oil. Oil is mainly made up of fat. Fat is the highest concentration of calories per gram (9 calories per gram) and shouldnt be neglected if youre counting calories.
But just note that not all the oil used in cooking is consumed. Some of it stays on the pan.
EDIT: To person above, stir frying veggies is actually prooven to retain more nutritional value. By quickly stir frying them over high heat and not for too long, it leaves you with deliciously crisp veggies with almost all the original nutritional content. By steaming them, youre damaging the vegetable. unless you dont steam it for too long.Health Question & Answer

Yes, you need to count that. If you're counting calories, you may want to keep an online food diary. I use Health Tracker at www.prevention.com. It tells me how much fat, protein and carbs I ate plus how many calories I burned.Health Question & Answer
Definitely. Any calories that you take in should be included in your calorie intake computation. I think 120 calories in 2 tablespoons of olive oil sounds about right.Health Question & Answer
Yup
And by stir-frying your veggies, you're removing nearly all nutritional value from them. Eat them steamed, instead. They keep much more of the vitamin profile that way.Health Question & Answer
