As a vegetarian i love my veggies and yes if your trying to lose a few pounds adding butter won't really help. What i like to do is add tereyaki sauce or to fry it in a very small amount of olive oil. You can do a lot of veggies like that. Carrots and green beans are my favorite especially slow cooked in tereyaki sauce. also if you like burgers...veggie burgers are great! If I want butter (but not the real thing) and happen to be in the US, I use the I Can't Believe It's Not Butter spray.

As someone already pointed out, cooking vegetables kills much of the nutrients. Steaming is the best for retaining some of those nutrients. For example, steamed broccoli retains 80% of its vitamin C, whilst boiled broccoli retains only 33%.

I don't have a steamer so I lean towards sauteing my vegetables when I'm concerned about trying to maintain the most nutrients. Big woks are fab for veg. Some quick and easy cooking sauces for sauteing: slightly reduced balsamic vinegar; vegetable stock; chicken stock; soy sauce. I like to experiment with soy sauce, so sometimes I'll dissolve a bit of Splenda into it or I will dissolve a bit of wasabi in it.
There are two quick sauces you can make too:
Quick Cantonese
* 1 tablespoon and 2 teaspoons olive oil
* 2/3 onions, chopped
* 2/3 tomatoes, sliced
* 1/4 teaspoon minced fresh ginger root
* 1/4 teaspoon garlic, minced
* 1/4 teaspoon sugar (Splenda)
* 1/8 teaspoon salt
* 1 tablespoon soy sauce

Quick Szechwan
* 1 tablespoon olive oil
* 1 red chile peppers, seeded and finely chopped
* 3/4 teaspoon chopped fresh ginger
* 3/4 teaspoon minced garlic
* 1 tablespoon and 2 teaspoons sugar (Splenda)
* 1 tablespoon and 2 teaspoons ketchup (Sugar free Heinz)
* 1 tablespoon and 2 teaspoons vinegar

Vegs I like to stir fry/saute: baby corn, carrot, spring (green) onion, onion, shallots, broccoli, cauliflower, asparagus, cabbage, zucchini, mushrooms, bell peppers, sugar peas, green beans, bok choy, bamboo shoot.


I like roasting certain vegetables. A favorite of mine is roasted Brussels sprouts. I cut them in half, then lightly cover/sprinkle with olive oil, salt, pepper and minced garlic. I place them cut side up. They come out sweet and salty. Other veg I like to roast: zucchini with garlic and fresh thyme; tomatoes with balsamic vinegar, minced garlic and fresh basil; eggplant with olive oil, dried oregano and garlic; carrots with balsamic vinegar and Splenda; leeks with vegetable broth.

I'll parboil or boil on occasion. Usually I use this method when I'm making some sort of mash. Recently I wanted creamy cauliflower mash (faux mashed potatoes). After cooking and mashing/pureeing the cauliflower I add fat free (or low fat) sour cream, fat free (or low fat) cream cheese and butter flavored salt or chicken stock.

Herbs and spices! Rosemary, finely chopped onions, pepper, garlic... Take a baking dish, put chopped veggies inside and mix with a tiny bit of extra virgin olive oil (just enough to get on the veggies so they don't burn to the bottom of the dish) and mix it with a tiny bit of garlic salt, pepper, rosemary, or any kind of herb you like. It will be great.
I reccommend: carrots, butternut squash, brussel sprouts cut in half, mushrooms. But if you don't like those, use whatever you want!

Cover the dish with a lid or foil, bake 400 degrees for about 15 minutes - check on them, they should be baked, if not just put them in longer until they are.Health Question & Answer

I just use italian dressing or light ranch. OH by the way, It is not the healthiest to eat your veggies cooked. Cooking veggies kills the nutrients in them. You should really eat them raw or lightly steamed. =)Health Question & Answer
