Your joints are surrounded by a synovial membrane that is filled with synovial fluid. This structure is "water cooling" the joint. Within the synovial fluid are some dissolved gases. When your joint is cracked, the synovial jacket cannot expand unless the pressure drops. That happens when the gases come out of solution (similar to opening a can of soda). This makes a cracking sound. When the joint reaches it's new limit of expansion, it cracks again.
