PTs work on a variety of things to help people learn to independently navigate their environments.
They work on balance, strength, endurance, walking (called gait).
They do this by coming up with activities that strengthen the weak areas. For some it may be working on standing tolerance someone would need to prepare a meal, for some it may be practicing navigating stairs.

While some PT's do work with old folks all day (in a skilled nursing facility) PT's also work in hospital settings with various age groups, in pediatrics (working with kids 0-3) or in school based settings.
In pediatrics the PT may be working to stretch out the limbs to prevent contractures in kids born with a disability (like cerebral palsy) or helping a child learn to use thier large muscles in order to crawl or walk.
In the school setting PT's also may help with wheel chair fittings or teaching the child to independently navigate the school environment.
PT's do various things depending on the setting they are working in.
As far as schooling there are 2 different routes to go. You could either be a PT which requires a masters (I believe) or a PT assistant which requires a 2 year degree. With both programs you take a national test when you are finished in order to get licensed to practice. Here is a link to the American PT Association to give you more info on the schooling, programs and more info on the job itself.
