You're not looking for causes, right.? Just what's the physical change that happens.?

It's generally a matter of osmotic gradient. The osmotic gradient in the lumen of the bowel (the inside of the "tube") goes up for a variety of reasons and your body responds by absorbing less water from the fecal matter (or drawing water out of the body into the fecal matter, depending on how severe the issue is.)... ... Voila. Diarrhea.

There are other kinds of diarrhea (secretory, inflammatory, motility-related, etc.) but for the purposes of a quickie explanation, they're all different causes of osmotic changes.

Not sure what osmosis is, or what an osmotic gradient is.?
Osmosis is the process by which concentrations between two different chambers, separated by a semi-permeable membrane, normalize. A more concentrated solution on one side of a semi-permeable membrane (like a cell membrane, for example) will cause an influx of fluid to normalize the concentrations on both sides.

Concentration is determined by the NUMBER of dissolved molecules and not by the SIZE of those molecules... relating this back to diarrhea with an example: Having a LOT of little molecules dissolved in the bowel (like if you take high doses of Magnesium or Vitamin C) makes it more concentrated... extra water flows into the bowel to normalize the concentration gradients.
