I believe it stops being produced
Sperm continues to be produced but don't exit through the vas deferens, and are reabsorbed. Now for the first few weeks after the surgery there is still residual that does exit so pregnancy can result. Also your eggs are still there they just are not released. Just like when you are on birth control pills, you don't ovulate.
Eggs and sperm continue to be produced but has no place to go and is disposed by your body.
