venison is very light in fat, and has virtually no saturated fat. You therefore need to cook it carefully as it can taste very dry. Ostrich is also a good low fat meat.
Just like certain single women, different deer have different individual percentages of fat.
I couldn't say precisely, but it couldn't be much at all considering a deer's diet and that fact that the meat is so lean to being with! I have to cut mine with hamburger meat when i make venison burgers because the venison by itself burns away too quickly.
