Depends on which white cheese or yellow cheese you are referring to. Mozzarella is a white cheese that generally has less fat than cheddar (yellow cheese), but that doesn't necessarily mean it's better for you, it just depends on bacteria, structure, aging and processing. As long as the cheese is still pure white, the cheese is not mature, and there are some claims (unfounded) that the age of cheese makes a difference on the nutritional value.
