There are large blood vesicles both venous and arterial that run through the palate of your mouth. As ice cream is frozen and very cold it results in the constriction (vasoconstriction) of these vesicles which in turn causes vasoconstriction to some of the blood vesicles in the frontal aspect of your brain. This causes the meninges inside your brain to also constrict resulting in the bani in the front of your head. Try eating slower or not so cold.
