There are actually three parts to the ear - the outer ear, middle ear, and inner ear. The outer ear contains the portion of the ear that can be seen as well as the ear canal up to the point of the ear drum. The middle ear is an air filled cavity between the eardrum & the inner ear (the part of the ear that contains the organ of hearing). The middle ear has a tube, called the Eustachian tube, that runs from the floor of the middle ear cavity to the back of the throat. That tube is responsible for keeping the pressure in the middle ear the same as atmospheric pressure. The Eustachian tube is usually closed, but it opens briefly when you swallow or chew. You can also usually force it open by holding your nose, keeping your mouth closed and blowing. When there is inflammation in this tube (i.e. with allergies or upper repiratory infections) the tube doesn't open as it should & creates a situation where the pressure in the middle ear becomes more negative than atmospheric pressure. When this happens, the middle ear begins to draw moisture/fluid from the skin lining the middle ear cavity & the middle ear fills up with fluid. The only way the fluid can get out is if the inflammation in the Eustachian tube goes away or the Eustachian tube is forced open. If the Eustachian tube can not be forced open and you can not get the inflammation to go away, the fluid will build up to the point where it will burst the eardrum & it will drain out that way.

Our ear is made up of two regions. The internal ear which is very sensitive for sound waves of different wavelengths. As this portion is very sensitive it is protected by the complex structure of the external ear. The structure of the bones and the cartileges are so made that no external insects or objects can move in freely. But, as water is freely flowing it can enter the ear. But, the bones are so structured that they do not allow it return freely. Hence, it gets trapped inside and when given jerks it trickles out slowly.
