I have a family member who has battled anorexia for more than 10 years. I would say that some signs that they are developing the disease would be of course, eating less and exercising more. Some more subtle hints would be being secretive (especially about food), looking in mirrors more, and buying lots of magazines with celebrities in them or with diet tips. These are just a couple, but each case is unique and has their own symptoms, so you can never be sure. If you are concerned, don't accuse them of having an eating disorder outright, as either way they will deny it and get upset.
